Ingredients: A cup of almond meal | a cup of hazelnut meal | a teaspoon of baking powder | a pinch of salt | six eggs | a cup of honey | quarter cup of olive oil | two blood oranges’ zest and juice | two blood oranges | a tablespoon of honey

Procedure:  To prepare this dessert, first preheat the oven to 170 degrees Celsius. Line a springform pan with baking paper and have it greased. Next, add the hazelnut and almond meals, salt and baking powder in a large bowl and mix well. Add honey to a large microwave-safe jug and have it microwaved for about 30 seconds. Now, add blood orange zest and juice, and the olive oil, then whisk to mix. Mix in the eggs. Add the wet ingredients to the dry ones and have it mixed until it blends well. Pour the batter into the already prepared pan and bake for about 60 minutes, then remove it from the oven and allow it to cool. To make the blood orange compote, remove the zest from one of the oranges and cut it into fine pieces using a sharp knife. Now, peel and slice the oranges and put the slices in a bowl together with the orange zest. Stir in honey and have it refrigerated until needed.
