Almost everybody loves the creamy sourness of lime pies. Unfortunately, the ordinary recipe for these desserts is normally based on too much butter and sugar. But this particular recipe consists of the best whole food dessert ingredients available. And guess what? It’s a raw dessert, so you don’t even need to worry about the oven.

Healthy Coconut Lime Dessert Tarts Recipe 

Ingredients: a cup of nuts | two table spoons of shredded coconut | a cup of medjool dates | two tablespoons of coconut oil | a tablespoon of raw cacao | one and half teaspoons of vanilla extract | a pinch of salt | a cup of soaked cashews | half a cup of coconut cream | zest of a single lemon | juice from one lemon | a tablespoon of pure maple syrup

Procedure:  Process the nuts to form nut flour and put aside the produced flour in a bowl. Blend the medjool dates with a small drop of water to form a paste. Now, mix the processed nut flour, date mixture and the rest of the base ingredients and mix using your hands. Line a tart tray with liners and have the mixture pressed into them, then refrigerate for half an hour.

To make your filling, mix the soaked cashew nuts, lime juice, lime zest, coconut cream, vanilla extract and maple syrup in a blender until the mixture is smooth and creamy. Fill the base with the filling and refrigerate for about 2 to 3 hours.
